Ingredients Required

  • For the marination, you require around 500 g of deveined and cleaned prawns, ½ tsp of salt and white pepper, 1 tsp of lemon juice, and ginger-garlic paste.
  • For the batter, you need ½ a cup of all-purpose flour, ¼ cup of cornstarch, ¼ tsp of salt and baking powder, and ice-cold water (to adjust the consistency of the batter).
  • Other materials, oil for frying and chili flakes and chopped spring onions for garnishing.

Method

  • In a bowl, gently mix the prawns and other ingredients mentioned for the marination. Ensure the marinates coat the prawns well. Keep it covered for around half an hour.
  • In another bowl, mix the flour, corn flour, salt and baking powder. Slowly pour the cold water, whisk the ingredients, and ensure it’s a lump-free and smooth batter. The batter must appear thick enough so that it properly coats the prawns.
  • In a wok, heat the oil on medium-high heat. When the oil is heated enough for frying, dip the marinated prawns in the batter and fry them. Make sure the batter covers the prawns well.
  • Repeat the process and then serve by garnishing with chili flakes and spring onions.
