Ingredients Required
- A cup of split black gram or urad dal
- 2 finely chopped green chilies
- 1 tbsp of grated ginger
- Finely chopped 8 to 10 curry leaves
- 1 tsp of black peppercorns
- 1 tsp of cumin seeds
- Salt to taste
- Water
- Oil for frying
Methods
- Properly clean and soak the urad dal in water overnight.
- Next morning, grind the dal into a thick and smooth batter. Add water if necessary (to maintain consistency).
- In a large bowl, transfer the batter and beat it strongly for some minutes till it turns airy and light.
- Now for the seasoning, add the chopped green chilies and curry leaves, grated ginger, crushed black peppercorns, cumin seeds and salt as per taste. Properly mix the ingredients with the batter.
- Now, shaping the vadas is quite a task! First you need to wet your hands with some water. Take a portion of the batter, and shape it like a doughnut by creating a hole in the middle. Press the shape lightly.
- Meanwhile, in a frying pan, heat the oil. Then, very carefully slide them into the hot oil.
- Fry them till they look crispy and golden brown. Flip them occasionally.
- After they are fried, they take them out from the oil and place them on paper towel. This will ensure the excess oil to be removed from the fritters.
- Serve hot with some coconut chutney and sambar!
